Ingredients:

  • 300g of Arborio rice
  • 600ml of chicken broth
  • 100g of shrimp, peeled and deveined
  • 100g of squid, sliced
  • 100g of mussels, cleaned
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of saffron threads
  • Salt to taste
  • Black pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

  • Large skillet

Instructions:

  • Heat olive oil in a large skillet over medium heat.
  • Add the chopped onion and garlic, and sauté until the onion turns translucent.
  • Stir in the diced bell pepper and cook for another 5 minutes.
  • Add the Arborio rice and smoked paprika, stirring well to coat the rice with the oil and vegetables.
  • Pour in the chicken broth and bring to a boil, then lower the heat to a simmer.
  • Stir in the saffron threads, salt, and black pepper.
  • Add the shrimp, squid, and mussels, distributing them evenly over the rice.
  • Cover the skillet and let the paella simmer for about 20-25 minutes, or until the rice is cooked and the seafood is tender.
  • Remove from heat and let it rest for 5 minutes before serving.
  • Garnish with fresh parsley before serving.
